Jalapeno Popper Grilled Cheese

INGREDIENTS:
1 block of cream cheese
6-8 slices of crispy bacon
½ cup of finely diced fresh jalapenos
¼ cup of green onions
1.5 cups of shredded mozzarella cheese
1-2 teaspoons of your favorite BBQ seasoning
4 Brioche Buns
½ stick of butter
INSTRUCTIONS:
Chop & Mix: On a large cutting board, add the cream cheese, crispy bacon, jalapeños, green onions, and shredded mozzarella. Chop and mix everything together until well combined and spreadable.
Season It: Sprinkle in your BBQ seasoning and mix again until evenly incorporated.
Assemble the Sandwiches: Flip the brioche buns upside down (so the bottoms face outward). Spread a generous layer of the jalapeño popper filling onto each half of the bun. Put them together.
Butter the Outside: Spread softened butter on the outside of each bun half.
Grill It: Heat a griddle or cast iron pan over medium heat. Place sandwiches butter-side down and grill for 1–2 minutes per side until golden brown.
Melt & Press: Flip and gently press with a spatula. Cover with a lid or close the griddle to help melt the cheese. Cook another 1–2 minutes until gooey and crisp.
Serve Hot: Slice and serve immediately while hot and melty. Perfect for lunch, parties, or anytime indulgence! **Just an idea! I would do either pulled chicken or shredded pork in there as the primary sandwich and then use the mixture to top it off, not as the whole sandwich. Just to simmer down the heat a little bit because that's a lot of jalapenos- but I'm kind of a midwestern wimp though.
