Swiss Chard & Apple Salad

INGREDIENTS:
1 large bunch Swiss chard (red, green, or rainbow)
1 large apple (honey crisp if possible)
1/2 cup pecans
1/2 cup freshly grated parmesan (recommend using a block of Parmigiano-Reggiano)
Lemon Dressing:
1/4 cup olive oil
1/2 a lemon, juice only
1 tsp garlic powder
Salt + pepper, to taste
INSTRUCTIONS:
Make dressing: Add all dressing ingredients to a small jar or bowl. Shake or whisk together until well-combined. Set aside.
Cut chard: Wash and remove the thick bottom stem of the Swiss chard leaves. You may remove the entire stem if you'd like, but I like to leave the thinner part for a pop of colour and added texture! Next, stack a few leaves on top of one another and roll together. Slice along the rolled leaves, cutting chard into smaller, bite-sized pieces.
Next, slice the apple into thin, bite-sized pieces. Grate the parmesan.
Plate salad: Add chopped Swiss chard to a large serving plate or bowl. Top with sliced apples, pecans, and grated parmesan. Pour dressing overtop and toss to combine well. Taste and add additional salt and pepper, as desired. Serve immediately!
