Swiss Frittata

I love eggs! They are versatile and are quick to cook, which is fabulous for an easy weeknight dinner (and when I forgot to make sure any protein items were pulled to thaw the night before). I whipped this dish up using some onion and Swiss Chard a few days ago. I also love the color Swiss Chard adds to any dish!


One medium onion, larger or smaller depending on how much you like onion, Chopped

A little olive oil to coat the pan

One bunch of Swiss Chard, chopped (stem and all!)

6 eggs ( I cooked with a 10 inch pan, so if you have a larger or smaller pan you could use more or less eggs)

Pepper

Parmesan Cheese, grated


Preheat your oven to 350.

Using a pan that is oven safe is key. I love to cook with cast iron. Heat your pan on the stove over medium heat. Add the oil and let your onions sweat for a few minutes until they become almost translucent. Add in the Chard and cook it down until it is of desired consistency (I cooked mine for about 5 minutes). Beat your eggs in a separate bowl. Stir some pepper or other spices into your eggs and then pour over the Chard mix. Let cook for a minute then toss the Cheese onto the top. Throw it into the oven and cook until done. I believe it was in the oven for about 10 minutes but I'm notorious for not setting timers so be sure to keep an eye on it until all the egg is cooked. The edges will start to move away from the outer edge of the pan.

This is great with either some potatoes and a side salad or some great crusty bread and jam!
