Chicken Avocado Lettuce Wraps

INGREDIENTS:

4-6 romaine lettuce leaves

1 medium avocado

½ lemon or lime (for juice)

1 cup cooked chicken, shredded or cubed

1 roma tomato (or handful of grape tomatoes)

2 tablespoons chopped onion (red, green, white…whatever you like!)

¼ bell pepper, diced

Salt, pepper and garlic powder to taste.

INSTRUCTIONS:

  1. Take off the romaine lettuce leaf by leaf, being careful to make sure if remains in a single piece. Use your thumb and middle finger to run down the center stem and make sure to get all the dirt out of the outside edges of the lettuce, too. Rinse and repeat, then set on towels to dry. (Don't put these in your salad spinner).

  2. Cut avocado in half, remove pit and scoop flesh into a small mixing bowl.

  3. Using a fork, mash the avocado until nearly smooth.

  4. Squeeze lemon or lime juice into bowl and mix to combine.

  5. Sprinkle salt, pepper and garlic powder (to taste) into avocado and mix completely.

  6. Stir in chicken, tomatoes, onion and bell pepper until everything is evenly coated.

  7. Scoop mixture into clean, dry romaine leaves and enjoy! **This is one of those recipes that you can use leftover chicken from last night's dinner for a healthy nutritious lunch tomorrow! When I make these, I always add a little hot sauce or buffalo, because I can't help myself, haha.
