Radish and Chive Butter Baguette
7 tbsp European-style unsalted butter, softened (also known as cultured butter, it's higher in fat and richer in flavor)
3 tbsp chives, divided (or the green onions from this week's shares)
1/4 tsp Kosher salt, plus additional for seasoning
1/4 tsp freshly ground black pepper, plus additional for seasoning
1 tsp lemon juice
1 tsp extra virgin olive oil
1 cup coarsely chopped flat leaf parsley
1 10 inch crusty baguette, halved lengthwise
4 ounces radishes, trimmed and sliced thin
flake sea salt
Combine butter, 2 tbsp chives, 1/4 tsp salt and 1/4 tsp pepper in bowl.
Whisk lemon juice, olive oil and remaining 1 tbsp of chives in a medium bowl. Add parsley and toss to coat. Season with salt and pepper to taste.
Spread butter mixture over cut sides of baguette. Shingle radishes (overlap) onto butter bread.
Top with parsley salad. and sprinkle with flake sea salt to taste. Cut into serving pieces and enjoy!
