I received this recipe from Jeremy W. a CSA Member who shared this pesto with us! It sure does look good, it's on my list of recipes to try!
For those who want another use for their radish leaves we received this week. It makes a great pesto!
2 cups radish tops (packed)
2 cloves garlic
1/8 cup lemon juice
1/4 cup sliced almonds (or other similar nut)
1/4 cup parmesan cheese (+ more as needed for flavor)
1/4 cup olive oil (+ more as needed for proper texture)
Salt as needed for flavor
Use all of this in a food processor, scraping down the sides as needed to get texture consistent throughout.
Will fill a 16oz Mason jar to the brim.
