This is about as authentic as we get here in our lovely state of Minnesota :)
1 pound ground beef
1 medium yellow onion chopped
2 cobs of fresh sweet corn, cooked for 6 minutes and kernels cut off of the cob (about 1 1/2 cups)
2 11 ounce containers cream of mushroom soup
2 pounds tater tots
Preheat oven to 350*.
Brown ground beef and onion in a large skillet over medium-high heat. Once meat is starting to brown and is crumbly, remove from heat. Drain excess fat. This should take about 10 minutes.
Transfer meat mixture to a 9×13 casserole dish. Top with corn. Next top with cream of mushroom soup. Finally, top with tater tots. You can just dump them on, or mix it up a bit and make a cool pattern with the tots! :)
Bake in preheated oven for 45 minutes or until everything is heated through and tater tots are crisp on the outside
For extra crispy tater tots, allow to defrost slightly before baking.
